As a young mother of four in the early '70's, I was so disappointed
with a birthday cake I ordered for my young son's birthday. The
red color was so bitter that we had to scrape the decorations
off, so I decided I would learn to do this job, and not waste
my money on more cakes that we couldn't eat.
I enrolled in a cake decorating class at GTI (which is now GTCC)
and it was “Love at first squeeze” I was so amazed
that I had a talent that had been well hidden. I just couldn't
get enough of that magic. My teacher was Rose Mary Fosner and
such a talented and wonderful lady and we became lasting friends.
In 1972 I enrolled in my first Wilton course in Chicago and
was there two weeks for an extensive decorating class. I loved
every minute of this, except the homesick part. When I returned
home, my cake business was off the ground and running. The children
were so helpful and didn't eat many of my mistakes.
I later went back to Wilton in Chicago for another two week Master
Cake Decorating Class and later studied under some of the great
teachers in Philadelphia, Cleveland and Florida.
I also went to New York several times and took classes in Gum
Paste Flowers and was able to meet and talk with Sylvia Weinstock
and Collette Peters, the great Wedding Cake Designers.
I began teaching Cake Decorating and Party Foods for GTI (GTCC)
and taught for 14 years until my business became too large to
manage such a schedule. My husband and I had started a catering
business Pleasant Garden Catering and with the four children we
would load up the vans and off we would go to cater weddings.
We later built our own state of the art bakery with all the blessings
of the Health Department and business was booming. I had a wonderful
staff and manager and I was still able to be a mother and grandmother
and felt that I was always at home because the catering building
was right beside of our home.
In 2007 we decided to retire from the catering business and I
really did retire for 2 years, but I missed my brides so much
and I missed decorating those cakes, so I started over again.
Now I am Cakes By Dianne and just doing cakes and I love it.
I still have time to be a mother and grandmother but the creative
juices can still flow.
Over the years, I have learned many new techniques. Together
I know we will be able to design just the cake you have always
dreamed about and I promise you won't have to scrape the icing
off to eat it.
